Avocado Cheddar Toasts with crispy shallots

Ingredients
1 Baguette thinly sliced
1 Avocado thinly sliced
1/4 lbs. Grassy sharp cheddar
2 Tbsp. Olive oil
1 shallots, thinly sliced
1 pinch of salt and pepper

Instructions

1. Prepare crispy shallots: Heat the olive oil in a frying pan, loosely add the shallots in the oil. You should hear a faint crackling sound. Turn the heat down to medium add the salt and pepper and cook until golden brown. Remove the crispy  shallots from the oil and set both oil and shallots aside for the topping.

2. Preheat oven to 375 degrees F. Place bread on a baking sheet and bake for 5 mins until lightly toasted and remove from the oven. Place the cheddar on top of the bread and place them back into the oven for another few minutes until the cheese melts. Remove from the oven.

3. Top each toast with a couple slices of avocado, a sprinkle of crispy and drizzle with the seasoned shallot oil.
